If you set it to 1080p it stays there until you encounter a video that don't have that option, it goes back to auto. So when you wanna watch an SRS broadcast, guess what? Youtube is not a set and forget app. I said app for android/iOS but regardless, PC or mobile it's the same. It will eventually set itself back to auto without you knowing it not just because of SRS videos but even older videos that uses 5:4 aspect ratio, etc.
