You can certainly change your skin. You CAN only upload from a single directory, and it has to match your user name (as per the skin app instructions). It will detect newer/changed files and update your skin accordingly. At least it has in the past for me. I've updated my Audi like 3 times now.
You can use Content Manager to find out the name of any car part without issue. I haven't looked to see if it will show driver (so you could click on suit/gloves/helmet). I'll try that later today.

Edit: Nevermind, I just tried it now. Here's how you do it:
- Have Content Manager installed.
- Browse to the skin folder for the car. In this case, it's "...\Steam\steamapps\common\assettocorsa\content\cars\ks_lotus_25\"
- Double click on the biggest KN5 file in there to open the car in the CM Showroom.
- Click the following things:
- Then click on his noggin like so:
- Then click the 3dots (hamburger) button to the right of the txDiffuse file here:
- And tada!
