The Mini doesn't have any ABS so it will lock pretty easily if you are braking too hard. If it is turning you around when it locks it sounds like it might be the rear brakes that are locking not the fronts. You should have a look in your replay to see which wheel is locking and play around with the brake bias to make it more even. You can also bring down the brake power so you don't have to be so gentle on the pedal.
Remember that a tyre only has a finite amount of grip that needs to be shared between longitudinal and lateral force. If you are braking on the edge of grip and need to turn in to the the corner while still braking, the addition of the lateral force from cornering means you need to reduce the braking force to avoid locking.
