That to me sounds like a massive waste of time. There's 1 obvious place on the track where you can cut, which is the chicane. However, if you cut through the gravel it actually will cost you time, so best to stay clear. There's actually quite a few tracks where track limits are not as much respected as others.
In turn 5 (I think) you can cut too, but your car will bounce wide. I'm not sure if cutting the track will pay off there.
In racing you should go to the limits that a track allows. On some tracks, it means that the limits can be pushed a little bit. Donington may be one of them. However, on other tracks, like Le Mans for example, you will get a 'go below 35mph penalty' if you go slightly wide in quite a few corners.
For me, track limits are where the game draws the limit. Some I agree with, some I don't. But if you choose not to accept those limits, fine. But then also accept that you'll be slower through some of these corners than others. I don't however, feel obligated to "police myself" and report others.
