Watch a replay of real or sim race. Plus this often really has to be done for each car/track combo, there are things that are universal but each power level, grip level adds changes.
Plus it can also differ between drivers, I've seen guides and disagreed with how they take on the track.
Another difference is real track vs sim track. You will not go as fast on a real track because you want more safety, cars cost money, crashes cost lives often yours.
What may be fast in a sim may be a fast coffin in reality.
